Almond Nutter Butters

Free of refined sugar, gluten, and dairy and they're vegan! These cookies are so yummy and they have such a good texture.

If you know me, you know I have the biggest sweet tooth. I love all things baked (especially cookies, brownies, and muffins!!) and I love nut butters. So these cookies absolutely rocked my world. They're so easy and so fun! I ate them throughout the week and they saved well in the fridge and out of the fridge. Personally, I liked them better stored in a tupperware on the counter. I used almond butter because that's what I was feeling but you can replace it with any nut butter!


INGREDIENTS


1/2 cup almond butter (it's best to use one without added oils or sugar)

3/4 cup oat flour (I used Bob's Red Mill)

1/3 cup maple syrup

1 tsp vanilla

1 tsp baking powder


RECIPE


1. Preheat the oven to 325.

2. In a mixing bowl, combine almond butter, maple syrup, and vanilla.

3. In another bowl, mix the oat flour and baking powder.

4. Pour the dry ingredients into the nut butter mixture and mix them well.

5. Create small, inch-sized balls from the dough and put them on a greased cookie sheet. For the "nut shape" of the cookies, put two dough balls close together in the shape of an 8. Between each cookie, leave 1 inch of space.

6. Use a fork to create the pattern on the cookies. I sprayed coconut oil spray on the back of the fork between every few cookies so it wouldn't stick to the cookie dough and ruin the pattern.

7. Bake for 11 minutes or until the cookies hold the pattern while still remaining soft.
