Coconut Chicken Curry

Savory and packed with flavor, this play on curry is a hit for any group.

Curry is so yummy and so fun because you can do anything with it. Almost any vegetable can shine in a curry and there are so many fun spices! Curries can be sweet like mango or pineapple, spicy like sriracha, or savory like chicken. I went for savory and flavorful in this curry, but I want to try a sweet one soon. What is your favorite type of curry?


INGREDIENTS (makes 8 generous servings)


6 chicken breasts, cubed

3 red peppers, diced

1 bundle of asparagus, chopped

1/2 white onion, diced

2 cups bean sprouts

1/4 cup fresh basil, chopped

2 cans reduced fat coconut milk

1 cup chicken broth

2 limes

4 Tbs red curry paste

2 Tbs soy sauce

2 tsp fish sauce

1 tsp minced garlic

1 Tbs avocado or olive oil

1 Tbs honey

2 Tbs yellow curry powder

1 tsp ground cinnamon

2 packages brown rice noodles (I use Annie Chun's Pad Thai noodles)

Salt and pepper


RECIPE


1. In a large pot, boil 2 quarts of water.

2. While the water heats to boil, chop the vegetables and chicken. I would chop the chicken last to avoid cross-contamination.

3. In a large pan, add the garlic, peppers, asparagus, onions, basil, and chicken. Saute on medium-high heat in your choice of oil.

4. Once the water is boiling, add all the packages of rice noodles to the boiling water, stir to avoid the noodles sticking together.

5. In a medium saucepan, pour the chicken broth, coconut milk, soy sauce, fish sauce, honey, curry paste, and cinnamon. Heat to boiling, mixing frequently.

6. When the rice noodles are done, strain them and wash them with cool water. Put them in a large bowl with a teaspoon of oil mixed in so they won't stick together.

7. When the sauce mixture is boiling, add it to the vegetable saute mix, mixing thoroughly. Add the yellow curry powder and a pinch of salt and pepper. Juice the limes into the mixture.

8. When the sauce is back to boiling, it's finished.

9. Serve the curry over rice noodles, topping with bean sprouts as desired. Top with more basil if desired.
